|Producer||Still Fired Distilleries|
Fundy Gin is produced from Still Fired Distilleries in Annapolis Royal, Nova Scotia, the first landed settlement in Canada in 1605. Home to the Bay of Fundy which hosts the highest tide in the world. Andrew and Owen, the owners of Still Fired, met as underwater welders in Halifax and built their own still, Kirby. The Gin is triple distilled, passing over Bay of Fundy beach stone, refluxing the spirit to create a soft mouth filling experience. There are eight carefully chosen botanicals including a more floral juniper berrie and locally hand picked, sun dried sea dulse. - Still Fired Distilleries
Spirit Notes: The aroma offers subtle herbaceous smells of fresh rain, dulse, sea salt and ocean spray. It instantly starts with a cool, clean mouth feel that releases the floral taste of juniper and citrus peel and slowly opens to a pleasantly earthy aftertaste, with hints of licorice and fresh cracked peppercorns. This is truly a delightful experience of aroma and flavor can be enjoyed in a smooth tasting martini or simply on its own.
"The palate has some jammy sweetness. I get a note redolent of raspberry, along with lemon zest. Mid-palate there’s pine-forward juniper leading into a slightly more mineral seaweed salad note. Seaweed tends to be quite obvious and overpowering in most gins; however, what I like about Fundy Gin is the way that you get some of those green, stony notes, but as part of a well integrated palate...
On its own, Fundy Gin is a really intriguing story from beginning to end. Clear high notes, a well-balanced mid-palate and a nice, distinct finish make this a gin that has all the best characteristics of a good perfume." - The Gin Is In, full review here
