A large estate of roughly 50 hectares, the estate is known for its fruity, easy drinking Cab Franc; in fact it was the founder, Paul Filliatreau's stylistic shift to short macerations and stainless steel fermentations in the 70's that made made the style so popular in Parisian bistros. Most of the production is dedicated to Cabernet Franc from Saumur and Saumur-Champigny, with a small amount of Chenin Blanc. Today, all of the Filliatreau estate is certified organic with a portion practicing biodynamic.
The soil and subsoils of the vineyard are highly calcareous lending great acidity and vibrant fruit quality to the grapes. Their vinifications are carried out in stainless steel and bottled unfiltered. -Louis Dressner
