A skin-contact white from the indigenous Italian varieties grown by nuns. The vines were first planted in 1963 and are still managed and owned by the nuns. Farming is organic practices, no chemicals save the common copper-sulfur treatments. This vintage in particular had a re-fermentation in the bottle, which sometimes happens with wines bottled with low or no added sulfites like this. Therefore, the wine has become deliciously frizzante.
