Elbling is an ancient variety, grown for centuries in Germany and is a cousin of the more famous Riesling variety. Once it was the most widely planted grape in Germany, but lost traction after phylloxera when easier growing varieties were available. More mineral and less aromatic than Riesling, it drinks very dry. This is a sparkling version made my Matthais Hild, one of the few producers dedicated to the cultivation of the rare vine. Absolutely divine brunch wine.
