The historical archives of Cantina Fongoli represent a unique example of the history of bottling in Montefalco. Different types of paper, background colours and of course, the wording of the relevant laws on our wine labels represent political and socio-cultural changes as well as generational evolution. All these factors are united by the common thread of essentiality that over time has become one of the traditions of Cantina Fongoli.
Wine Notes: 60% Sangiovese/15% Sagrantino/15% Merlot/10% Montepulciano. From biodynamically farmed, certified-organic, hand-harvested estate fruit. In general, fruit from the younger vines goes into this traditional, non-riserva DOC Montefalco bottling. The different grapes are harvested and vinified separately, as their ripening times vary widely. Fermentation occurs with native yeasts and minimal sulfur in closed stainless steel tank with temperature control; the maceration is approximately 10 days. The wine is blended and aged for a minimum of 18 months in old Slavonian oak botti. It is bottled without fining, filtering or the addition of sulfur.
