NOTE: Orange skin and lychee, crisp and dry with very fine bubbles.
ELEVAGE: Grapes were crushed and destemmed into a one ton bin to macerate for 24 hours before pressing. Settled juice was moved to stainless steel where fermentation, including full malolactic, continued over about six months. In August of 2022 the wine was racked, sugar was added and it was bottled by hand without fining or filtration under crown cap. A second fermentation occurred in the bottle producing a dry, sparkling wine. Bottles were not disgorged.
MISCELLANEOUS: There is a bit of reduction that dissapates soon after opening. Holds its bubbles well overnight and drinks well for days. Despite all appearances this is not a pet-nat. The wine is fermented dry and given a small sugar addition prior to bottling. A second fermentation happens in the bottle and we sell it the following year as is, undisgorged.
