A rustic liter of red made from centuries old paintings of Pais, a grape that came to the Americas with the original Spanish colonists. A grape long relegated to peasant wine and sacramental use, Pais is getting its well-deserved due with its old vine bottles done in the traditional fashion finally becoming available to a wider audience. Earthy and slightly smoky, with moderately tannic expressions of cherry and plums. Farming is traditional, that is in the same organic methods the used before that concept was even thought of. Made fully naturally with native yeast, no filtering or fining and no additives, not even sulfites are employed. -Tristen Gild
