Bodegas Olivares Description

Beginning in 1930 Pascual Olivares Fernandez turned his focus to Monastrell (Mourvedre) as the best variety for Jumilla's climate, indicative of low rainfall and poor soils. It wasn't until the third generation, after nearly 50 years of production that Bodegas Olivares start exporting wine outside of Spain. Their family vineyard, "Finca Hoya de Santa Ana" is planted at 825 meters on sandy soil with high levels of chalk. Many of the vines are quite old and ungrafted, with some dating back to 1872. Thanks to the sandy soils, the phyloxerra aphids never made it to these vines. As is tradition with these ungrafted vines, new plantings are carried out with a method called "marcottage" in which a dead vine is replaced by burying a branch from a living neighbor, and once rooted, cutting the connection to the original vine. The high elevation of the vineyard, age of the vines, and soil type offer excellent conditions for complexity, structure and freshness. 

Their Monastrell receives a long maceration, and is aged in a combination of mostly used Burgundy barrels with only a few new barrels. Their dry rose is a blend of 70% Grenache and 30% Monastrell, light pink in hue fresh, racy and fruity. They also make a small amount of sweet rose wine that started as a privately consumed product they would only make for themselves and friendes. -Polaner
