Dry, stainless steel tank fermented Chkhaveri from Western Georgia not far from the Black Sea. A 5 day maceration with this grape makes some serious rosé. The nose is very lively with berry fruit, pomegranate and cranberry. Spicy fruit, sea breeze salinity, soaring minerality, and light tannic grip make this one of the most exciting rosés we've stocked the whole year.
STORY
Originally founded as a family cellar in 2006, Bibineishvili Wines was incorporated and renamed in 2015, and has been producing bio-organic wine for many years. Now employing current technology, Binineishvili Wines produces a variety of wines with elevated tastes.
They are a member of the Natural Wine Association.
LOCATION Village Erge, Adjara Municipality, Region Khelvachauri, Georgia
LAND Bibineishvili Wines sits at the meeting of the Chorokhi and Jochostskali rivers, just to the east of the Black Sea in the Adjara region. This environment by the sea offers humid air and a fertile river watershed, cultivating healthy winemaking conditions.
