Wine Notes: Griddu is Sicilian dialect for Grillo.
Grillo in here is second pass from vineyard, near Marsala.
more structured than the il Litro, more bitterness.
Grillo is thick skinned grape, 4 ha old vine Grillo Pierpaolo inherited from his Grandfather in 2003.
Grillo 75%, Verdejo is 25%; native yeast, maceration 10-15 days on skins, 13.5 abv.
Grillo ferm in wood, Verdejo in stainless.
Not certified but practicing biodynamic and organic.
Pierpaolo’s wife is Beatrice. She’s Spanish so they call the wine Dos Tierras.
