An exceedingly veratile sake that brings a little bit of everything to the table. Upon opening the sake is very forward with higher toned yet plenty ripe fruitiness. Plenty of citrus and pleasant springtime floral notes. As it develops with time more of its umami character gradually takes over. Sensory notes include papya, lemonade, and oyster mushrooms. You truly can't go wrong with this Tokubetsu.
"Okunomatsu’s signature Tokubetsu Junmai combines the definitive and stout flavors of Junmai sake with the elegance and delicate aroma of the more high-flying Ginjo style. An excellent introduction to the category of sake, this is versatile and food friendly. Aromas are fruity and green, giving way to a velvet texture and medium body with notes of melon and chamomile.
Okunomatsu Brewery’s history dates to 1716, when a family of samurai who had been defeated in battle turned to sake production to make a living. The tradition is carried on today by the 19th generation of the family, President Joji Yusa. With over 300 years of experience, they make powerful sake with clarity and precision." - Skurnik
