Fermented from all New York apples, it is 100% dry, aged on the lees, unfiltered, and in a farmhouse style. Each cider is hand made traditionally in small batches with minimal intervention. Any added ingredients in limited release ciders are made with elements foraged from the surrounding land. Because it’s made by hand, each batch, and each bottle, is unique.
Greenpoint Cidery is owned and run by Nika Carlson. Carlson fell in love with cider as a Brooklyn bar owner, and inspired by the Spanish, French, and traditional American cider she adored, transitioned to orchardist and cider maker (and designer (and distributor (and keg cleaner))). She is based in Brooklyn, and grows apples and makes cider in Hudson, NY.
Cider Notes: We're Laughing is a sparkling wild grape + cider combo that's perfect for a summer picnic. Brightly tart and tannic, it has champagne-like bubbles and notes of fresh cranberries, spicy, green bramble characteristics, creaminess, and a sour bite from the wild yeasts.
I took already finished dry cider, and re-fermented it with wild yeasts on clusters of whole grapes I foraged just outside the cidery. After a slow natural fermentation, I let the wine/cider sit on the pressed clusters (skin, stems, seeds and all) for two months before bottle conditioning. Those bottles aged another 6 months before they were ready for release.
It's named after a song by 1960s Ghanian Afro-psych band the Psychedelic Aliens, and the label is based some of my watercolor paintings. It's perfect to share with friends, and would pair beautifully with rich cheese and your other favorite picnic foods.
This cider is a very limited release (I only made 11 cases), so initial sales are limited to one bottle per customer.
