A blend of Orin (a Japanese apple variety bred in Aomori) and Kougyoku (aka Jonathan which has some possible roots to orchards in our neck of the woods). It’s a super bubbly apple pet-nat with a finer mousse texture than most so be cautious when opening. Extremely bright with a lot of green apple skin and leafiness up front and a very subtle bitter, graham cracker malty finish. -Matt
Tucked away in Nanyo city within Yamagata Prefecture is Grape Republic, a collaborative winery in operation since 2015 and officially established in 2017 with the completion of their winery. This region’s mixed terrain, moisture conditions and wide temperature fluctuations make it well suited to viticulture (and apple orchards) and is home to several other wine making projects. Grape Republic strictly adheres to the principles of organic farming, zero additive winemaking and a mix of buried terracotta vessels and stainless steel for their fermentations for both european and hybrid varieties. Through making clean and delicious natural wine synonymous with Nanyo and Yamagata, Grape Republic is hoping to attract a new contingent of farmers and winemakers to the area. An important effort as thousands of hectares of farmland in Japan have been suffering from abandonment and disuse.
